Grilled Stuffed Tomatoes
- 5 -6 roma tomatoes or 5 -6 plum tomatoes
- 5 -6 ounces goat cheese, room temperature (not crumbled)
- 12 cup milk or 12 cup cream
- 1 tablespoon italian seasoning or 1 tablespoon all purpose Greek seasoning, blend
- 1 tablespoon lemon juice
- 13 cup plain breadcrumbs
- Spray a round foil cake pan with olive oil.
- In a small/medium bowl, mix together the goat cheese and the cream or milk.
- Then mix in the seasoning blend and the lemon juice until well blended.
- Mix in the breadcrumbs.
- Cut the tomatoes in half and place in the pan cut side up.
- Divide the stuffing mixture evenly on top of the tomatoes.
- Put the pan on the grill and cook over medium-high heat until the tops are golden.
- Serve warm as an appetizer or a side dish.
