Grilled Veggie Tostadas
- 2 whole Corn Tortillas
- 1 whole Anaheim Pepper
- 1 whole Yellow Squash
- 2 whole Crimini Mushrooms
- 2 Tablespoons Guacamole
- 2 Tablespoons Pepper Jack Cheese, Grated
- 1 whole Radish, Sliced
- 4 sprigs Cilantro
- 2 Tablespoons Salsa Verde
- Char tortillas over medium heat on your barbecue grill or gas stove.
- Do the same with the vegetables.
- When done, slice the vegetables.
- Spread guacamole evenly on each tortilla.
- Top with pepper, squash, mushrooms, cheese and radish.
- Garnish with cilantro and finish with salsa verde.
- Enjoy!
