Marinated Mushrooms
- 1 tablespoon olive oil
- 14 cup diced smoked bacon
- 3 cups quartered button mushrooms
- 1 rosemary sprig
- 14 teaspoon salt
- 14 cup white balsamic vinegar
- 1 tablespoon agave syrup
- In a saucepan, heat oil over medium heat.
- Add bacon and cook, stirring often, until fat is slightly rendered.
- Add mushrooms, rosemary and salt and cook, stirring often until mushrooms are soft.
- Add vinegar and agave syrup and bring to a simmer.
- Boil until liquid is evaporated, about 8 minutes.
- Let cool to room temperature.
- Discard rosemary sprig.
