Tangerine Chicken

  1. In a large frying pan, melt butter over high heat.
  2. Add chicken and season with salt and pepper.
  3. Cook, turning once, until chicken is cooked through, 8-10 minutes.
  4. Remove chicken.
  5. Add flour to fat in pan.
  6. Cook, stirring for 1-2 minutes.
  7. Whisk in orange juice.
  8. Bring to a boil, reduce heat and simmer, stirring, until sauce is smooth and thick, about 2 minutes.
  9. Season with cinnamon and salt and pepper to taste.
  10. Return chicken to pan and turn to coat with the sauce.
  11. Mix in tangerines and peel and serve hot.
