Tangerine Chicken
- 3 tablespoons butter
- 4 boneless skinless chicken breast halves
- salt and pepper
- 2 tablespoons flour
- 1 cup orange juice concentrate, mixed with
- 12 cup water
- 14 teaspoon cinnamon
- 3 tangerines, peeled and sectioned
- 1 tablespoon grated tangerine peel
- In a large frying pan, melt butter over high heat.
- Add chicken and season with salt and pepper.
- Cook, turning once, until chicken is cooked through, 8-10 minutes.
- Remove chicken.
- Add flour to fat in pan.
- Cook, stirring for 1-2 minutes.
- Whisk in orange juice.
- Bring to a boil, reduce heat and simmer, stirring, until sauce is smooth and thick, about 2 minutes.
- Season with cinnamon and salt and pepper to taste.
- Return chicken to pan and turn to coat with the sauce.
- Mix in tangerines and peel and serve hot.
