Lemon Basil Chicken

- 2 tsp. lemon juice
- 1 tsp. honey
- 1/8 tsp. dried basil leaves
- 3 oz. boneless skinless chicken breast
- 1/2 medium red pepper
- 1 fresh portobello mushroom
- 2 Tbsp. SEVEN SEAS FREE Red Wine Vinaigrette Fat Free Dressing, divided
- 1 medium baked potato Safeway 2 pkg For $5.00 thru 02/09
- 1 tsp. trans fat free canola-based soft margarine
- 2 Tbsp. BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1/2 cup fresh or frozen blueberries (thawed if frozen) Whole Foods 3 For $10.00 thru 02/09
- 2 Tbsp. COOL WHIP FREE Whipped Topping
- 1 Tbsp. PLANTERS Sliced Almonds
- 8 fl oz (1 cup) drinking water
- Mix MIRACLE WHIP LIGHT, lemon juice, honey, and basil in a bowl; season as desired with favorite salt-free seasoning.
- Place chicken on grill or broiler pan sprayed with cooking spray.
- Broil or grill 4 min.
- on each side, or until cooked through, turning and brushing with dressing mixture.
- Brush pepper and mushroom with 1/2 Tbsp.

- Enjoy blueberries topped with whipped topping and almonds for dessert.
