Bali Baked Fish Recipe
- 2 lb red snapper fillets Salt to taste Freshly-grnd black pepper to taste
- 1 x onion quartered
- 3 x garlic cloves minced
- 1 Tbsp. minced gingerroot
- 1 Tbsp. tamarind paste
- 1 Tbsp. Oriental sesame oil
- 1/2 tsp grnd cumin
- 2 Tbsp. water Fresh lemon juice to taste
- 3 Tbsp. chopped fresh mint or possibly to taste
- Preheat the oven to 350 degrees.
- Pat dry the fish fillets, season with salt and pepper, and arrange in a shallow baking dish.
- In a blender or possibly food processor combine the onion, garlic, gingerroot, tamarind paste, sesame oil, cumin, salt to taste, and 2 Tbsp.
- water and blend till smooth.
- Pour mix over fish, coating both sides.
- Bake fish, covered with foil, in the oven for 20 to 25 min, or possibly till it flakes easily with a fork.
- Transfer fillets to a serving dish, correct seasoning, adding more salt if necessary, and drizzle with lemon juice.
- Garnish with mint.
- This recipe yields 4 to 6 servings.
