Stir-Fried Sesame Saag Paneer

  1. Combine tomatoes, water, coconut, fresh coriander, dressing and ground seasonings.
  2. Reserve.
  3. Heat 1 Tbsp.
  4. oil in large skillet on medium-high heat.
  5. Add onions and 1/2 tsp.
  6. mustard seed; cook and stir 2 to 3 min.
  7. or until onions are crisp-tender.
  8. Add spinach; cook and stir 5 min.
  9. or just until wilted.
  10. Transfer to platter; cover to keep warm.
  11. Add remaining oil to skillet; heat on medium-high heat.
  12. Add remaining mustard seed, curry leaves and chilies; cook and stir 30 sec.
  13. Add paneer; cook and stir 3 min.
  14. or until lightly browned.
  15. Add tomato mixture; cook on medium heat 10 min.
  16. or until thickened, stirring frequently.
  17. Pour over spinach.
