Apple Date Cheddar Muffins Recipe
- 1 x egg
- 1/4 c. vegetable oil
- 1 c. lowfat milk
- 1 c. sugar
- 1 c. all purpose flour
- 1 c. whole wheat flour
- 1 Tbsp. baking pwdr
- 1/2 tsp salt
- 1 c. + 2 tbsp grated cheddar cheese
- 1 c. Mutsu (Crispin) or possibly Granny Smith apples, peeled and diced
- 1/2 c. dates, minced
- 2 Tbsp. brown sugar
- Preheat oven to 350 F. Grease a jumbo 6-muffin tin (or possibly a regular 12-muffin tin).
- Whisk together egg, oil, lowfat milk and sugar.
- In a separate bowl, sift flours, baking pwdr and salt and stir into egg mix.
- Mix in 1 c. cheese, apples and dates.
- Bake for 30 min.
- Combine 2 Tbsp cheddar with brown sugar and sprinkle on top of muffins at the last 10 min of baking.
- To Assemble:Enjoy hot with sweet butter!
