Green Beans With Citrus Nuts
- 1 lb green beans, trimmed
- 2 teaspoons butter
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, minced
- 14 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons chopped fresh parsley
- 12 teaspoon grated orange rind
- 2 tablespoons chopped blanched hazelnuts
- Bring a large saucepan of water to a boil, add beans, and cook for 5 minutes.
- Place beans into ice water, and drain.
- Heat a large skillet over medium-high heat, and add butter, and oil.
- Swirl until butter melts.
- Remove garlic, and set aside.
- Add beans, and sprinkle with salt, and pepper, and cook 2 minutes, tossing frequently.
- Combine hazelnuts, parsley, orange rind, and garlic clove, and sprinkle over beans.
