Turkey Meat Loaf Burgers
- 2 lbs ground turkey
- 1 medium onion (chopped fine by hand or food processor)
- 2 garlic cloves, minced
- 2 finely grated carrots (3/4 cup)
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 14 teaspoon kosher salt
- 18 teaspoon ground black pepper
- 8 ounces mozzarella cheese, cut in 8 slices
- 8 slices crispy bacon, each cut in half
- 2 tomatoes, cut in 4 thick slices
- In a large bowl, combine ground turkey with the onion, garlic, grated carrots, tomato paste, Dijon mustard, kosher salt, and freshly ground black pepper.
- Form into 8 patties, each 3/4 inch thick.
- Place on a medium-hot grill and cook 5 minutes per side.
- (Or to cook on the stove top, heat 2 tablespoons olive oil in a grill pan over medium heat.
- Place the burgers in the pan and cook 7 to 8 minutes; flip and cook 5 minutes more.

- Top with sliced mozzarella.
- Cook 2 to 3 minutes longer, until the cheese melts.
- Top each with 2 pieces of crispy bacon and 1 slice of tomato and serve.
