Bacon and Mushroom Stir-Fry

  1. Heat the oil in a large pan or wok.
  2. Add the bacon and stir-fry for 4 minutes, then add the mushrooms and stir-fry for a further 5 minutes until the bacon and mushrooms turn golden.
  3. Add the garlic, ginger and scallions, and cook for another 2 minutes.
  4. Add the tomatoes, and season.
  5. Stir-fry for 3-4 minutes until soft, add the soy sauce.
  6. Serve with rice or noodles.
