Spicy Chicken and Veg Soup

  1. Heat oil over med heat in a med sauce pan.
  2. Add vegetables and cook 5 to 10 minutes.
  3. Pour in V8 and chicken stock, bring to a boil.
  4. Add bay leaf and seasonings.
  5. Continue to boil until all veggies are tender, and flavors are blended.
  6. To serve put a big spoonful of rice in each bowl and top with soup.
