Roasted Sweet Salsa
- 10 -12 large tomatoes, cut in 1/2
- 3 -4 large tomatoes, diced
- 4 jalapeno peppers (more or less depending on your heat wants)
- 1 bulb of garlic (I like garlic so you may want to use less)
- 2 bunches green onions
- 1 bunch cilantro
- 1 lime
- 2 tablespoons honey
- Start by putting the 1/2 tomatoes, peppers and bulb of garlic on the grill.
- Keep the tomatoes on until the skins fall off, but take them off before they get too mushy.
- I let the peppers and garlic on until they are blackened.
- Skin and chop the tomatoes up into a bowl.
- Skin and remove the seeds from the peppers (you can leave the seeds if you want it hotter).
- Mince the Garlic and add to the tomatoes.
- Finely chop and add green onions and cilantro.
- Cube the 3-4 fresh tomatoes and add.
- Squeeze in the juice of the lime.
- Add Honey to taste.
- Let chill for 3-4 hours.
