Savory Island Fajitas
- 1 can pineapple juice
- 3/4 pound beef, flank steak (london broil)
- 2 each sweet bell peppers cut into strips
- 1 large red onion sliced
- 1 cup monterey jack cheese shredded
- 4 each flour tortillas
- Pour pineapple juice over flank steak in non-metallic dish.
- Cover, marinate 30 minutes in refrigerator.
- Discard marinade.
- Grill or broil steak with peppers, onion for 15 minutes for medium rare or until vegetables are tender.
- Divide steak and vegetables and cheese among 4 flour tortillas.
- Roll up.
