Frank's Special Spanish Style Rice
- 2 cups white rice
- 4 cups water
- 12 cup green Spanish olives, sliced thin
- 6 ounces tomato paste
- 1 onion, sliced thin
- 7 tablespoons vegetable oil
- 2 tablespoons salt
- 2 (1/4 ounce) packets sazon goya
- 12 teaspoon ground cumin
- 1 tablespoon garlic powder
- 2 tablespoons achiote seeds
- 6 tablespoons sofrito sauce
- Heat oil in skillet.
- Add seeds, and wait until they loose color.
- Scoop them out.
- Add onions and saute until soft and translucent.
- Add all remaining ingriedients and stir well.
- When liquid has been absorbed by rice, lower flame and cover until rice is cooked.
- You can add a can of rinsed beans & or cooked sausage at this point if you'd like.Also ,if you can't find sofrito, you can saute 1/2 small chopped red & 1/2 small chopped green pepper with onion.
