Quick, Colourful Tofu Stir-Fry

  1. Heat oil in a large frying pan or a wok.
  2. Add in all of the veggies except for the pak choi leaves.
  3. Sautee over medium heat for 5 minutes stirring once in a while.
  4. Season with rosemary and curry powder.
  5. Add the tofu and sautee for another 5 minutes.
  6. Now add the pak choi leaves.
  7. Sautee until leaves have shrunken (approx.
  8. 2 minutes).
  9. Remove from heat and stir in any optional toppings.
  10. Season with salt to taste.
  11. Enjoy plain, with brown rice or noodles.
