Gluten Free Ginger Berry Crisp
- 4 cup fresh or frozen berries
- 1 cup almond flour
- 1/4 cup ginger bits or crystallized ginger (this is available at Penzey's Spices)
- 1/4 cup coconut oil or butter
- 1 tsp pure vanilla extract
- 1 maple syrup to taste (2 tablespoons is suggested)
- 1 whipped cream or ice cream, optional
- Preheat oven to 375.
- Grease an 8 X 8 inch baking dish.
- Place the berries and the ginger in the baking dish.
- In a mixing bowl, combine the flour, oil or butter, vanilla and syrup and mix until crumbly.
- Sprinkle the topping over the berries.
- Bake for 30 to 40 minutes, until slightly browned.
- Serve warm with whipped cream or ice cream if desired.
