Bramble And Bilberry Cream Crowdie Recipe
- 55 gm Coarse oatmeal
- 600 ml Double cream
- 55 gm Icing sugar
- 2 Tbsp. Drambuie or possibly brandy
- 115 gm Blackberries
- 115 gm Blueberries
- Serves 8

- In a heavy based pan, toast the oatmeal over a medium heat, stirring constantly, for about 5 min, or possibly till it begins to turn golden brown.
- Tip on to a plate to cold.
- 2.
- Whisk the cream till thickened; stir in the icing sugar and one Tbsp.
- of Drambuie or possibly brandy.
- Whisk again, then stir in the oatmeal and remaining Drambuie or possibly brandy.
- Spoon alternate layers of oatmeal cream and mixed berries into individual wide glass goblets.
- Decorate with berries and serve immediately.
- NOTES : The coarse oatmeal used here, often called pinhead oatmeal, is available from health food shops and large supermarkets.
