Nifty Roasted Bones Stock

  1. Preheat oven to 450F.
  2. Roughly chop vegetables.
  3. Place bones in pan with onions, carrots, celery and garlic.
  4. Roast for 30 minutes, turning once.
  5. Remove pan from oven.
  6. Place contents in heavy bottomed pan.
  7. (A Dutch or French oven is perfect.
  8. ).
  9. Deglaze pan with two cups HOT water.
  10. Add water, herbs and seasonings.
  11. Simmer for three hours.
  12. Add red wine vinegar.
  13. Simmer for two more hours.
  14. Strain.
  15. Jar and refrigerate, if not using immediately.
