Sig's Zebra Butter and Vanilla Cookies

  1. in a large bowl whisk the sugars and butter until creamy
  2. beat in the egg and vanilla extract until fluffy
  3. add salt and flour stir in until mixed well
  4. divide the dough into two halves
  5. add the cocoa.
  6. and cinnamon to one half and mix in
  7. roll each half between waxed paper into 9inch squares.
  8. cut both squares into 3 inch strips then cut the strips into.
  9. 4 1/2 x3 inch rectangles
  10. place one cream coloured rectangle on plastic wrap or grease proof paper top with chocolate rectangle, repeat layers until dough is used up.
  11. Wrap in the plastic wrap and refrigerate for at least two hours
  12. unwrap and cut widthwise into 18 slices about 1/4 inch thick
  13. either roll out slightly to get marble look or leave stripy look cut out the biscuit shape
  14. place on ungreased.
  15. baking sheet bake at 375F for 8-10 minutes, bake until golden let stand for 2 minutes to cool.
