Sig's Zebra Butter and Vanilla Cookies
- 1 1/2 cup butter, softened
- 1 cup fine sugar
- 2/3 cup confectioners sugar
- 1 egg medium
- 1 tsp vanilla extract
- 3 cup all-purpose flour
- 1/4 tsp sea salt
- 1/4 cup of cocoa powder
- 1 good pinch of cinnamon
- in a large bowl whisk the sugars and butter until creamy
- beat in the egg and vanilla extract until fluffy
- add salt and flour stir in until mixed well
- divide the dough into two halves
- add the cocoa.
- and cinnamon to one half and mix in
- roll each half between waxed paper into 9inch squares.
- cut both squares into 3 inch strips then cut the strips into.
- 4 1/2 x3 inch rectangles
- place one cream coloured rectangle on plastic wrap or grease proof paper top with chocolate rectangle, repeat layers until dough is used up.
- Wrap in the plastic wrap and refrigerate for at least two hours
- unwrap and cut widthwise into 18 slices about 1/4 inch thick
- either roll out slightly to get marble look or leave stripy look cut out the biscuit shape
- place on ungreased.
- baking sheet bake at 375F for 8-10 minutes, bake until golden let stand for 2 minutes to cool.
