Papaya Chutney Sauce
- 2 papayas
- 1 medium red onion
- 2 clove garlic
- 1/2 inch piece fresh ginger
- 1 cup red wine vinegar
- 1/2 cup golden brown sugar
- 1/4 cup dried cranberries
- 1 stick cinnamon
- 1/2 tsp salt
- peel papaya and cut in half
- scoop out the seeds and cit into large chunks
- peel and chop onion
- peel the garlic and ginger, and mince both
- combine all ingredients in large saucepan and bring to a boil.
- lower heat and simmer, stirring occasionally,until the onion is tender, about 15 minutes.
- cool to room temp.
- remove the cinnamon stick and puree in food processor or blender until smooth.
- sauce may be used immediately or refrigerated up to 2 weeks.
