Apricots Stuffed With Pistachio Mint Quinoa

  1. In food processor combine garlic, quinoa, pistachios, mint, cheese, lime zest and juice.
  2. Pulse until finely chopped.
  3. Season to taste with pepper.
  4. Slice apricots down one side to form a pocket.
  5. Stuff apricots with quinoa mixture.
