Apricots Stuffed With Pistachio Mint Quinoa
- 1 garlic clove, roughly chopped
- 14 cup cooked quinoa, cooled
- 2 tablespoons lightly roasted pistachios
- 1 tablespoon chopped of fresh mint
- 2 tablespoons crumbled feta cheese
- 12 teaspoon fresh lime zest
- 1 tablespoon lime juice
- freshly cracked black pepper
- 24 soft dried apricots
- In food processor combine garlic, quinoa, pistachios, mint, cheese, lime zest and juice.
- Pulse until finely chopped.
- Season to taste with pepper.
- Slice apricots down one side to form a pocket.
- Stuff apricots with quinoa mixture.
