Chinese-Style Fried Rice
- 1 Tbsp. oil
- 4 boneless skinless chicken breasts (1-1/4 lb.), cut into bite-sized picees
- 1 cup frozen peas
- 1 cup finely chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup sliced carrots
- 2 cups instant white rice, uncooked
- 1 can (10 fl oz/ 284 mL) chicken broth
- 2 Tbsp. soy sauce
- 1/2 tsp. each: garlic powder and ground ginger
- Heat oil in large skillet on high heat.
- Add chicken; cook 5 to 8 min.
- or until cooked through, stirring constantly.
- Add peas, onion, carrots and rice; cook and stir 2 to 3 min.
- or until onion is crisp-tender.
- Stir in broth, soy sauce and seasonings.
- Bring to boil; cover.
- Remove from heat; let stand 5 min.
- Fluff with fork.
