Quick Skillet Squash Medley
- 14 cup butter or 14 cup margarine
- 1 12 cups butternut squash, peeled cubed 1-inch pieces
- 1 12 cups yellow squash, unpeeled quartered, sliced into 1/2-inch pieces
- 1 tablespoon brown sugar, firmly packed
- 1 pinch nutmeg
- 1 12 cups zucchini, unpeeled, sliced 1/8-inch pieces
- salt, to taste
- in 10 " skillet melt butter, stir in remaining ingredients except zucchini.
- cook over medium heat, stirring often.
- stir in zucchini, continue cooking until squash are crispy tender.
