Fruit-Filled Omelette

  1. Melt margarine or butter in 8-inch nonstick skillet over medium heat.
  2. Blend egg substitute, sugar and vanilla in bowl; pour into skillet.
  3. Cook, lifting edges to allow uncooked portion to flow underneath.
  4. When almost set, spoon fruit over half of omelette.
  5. Fold other half over filling; slide onto serving dish.
  6. Garnish and serve immediately.
