Citrus-Simmered Parsnips

  1. Combine parsnips, orange juice, water, butter, and 1/4 teaspoon salt in 4-quart saucepan.
  2. Heat to boiling on high.
  3. Reduce heat to medium.
  4. Cover; cook 18 to 20 minutes or until tender and glazed, stirring.
  5. Stir in 1/4 teaspoon each salt and pepper.
  6. Top with 1 teaspoon chopped fresh tarragon leaves.
  7. Serve with roasted or seared pork.
