Citrus-Simmered Parsnips
- 1 lb. parsnips
- 1 c. fresh orange juice
- 1 c. water
- 2 tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. Pepper
- 1 tsp. chopped fresh tarragon leaves
- Combine parsnips, orange juice, water, butter, and 1/4 teaspoon salt in 4-quart saucepan.
- Heat to boiling on high.
- Reduce heat to medium.
- Cover; cook 18 to 20 minutes or until tender and glazed, stirring.
- Stir in 1/4 teaspoon each salt and pepper.
- Top with 1 teaspoon chopped fresh tarragon leaves.
- Serve with roasted or seared pork.
