Feta Cheese Stuffed Zucchini
- 2 whole Zucchinis, Large
- 1 Tablespoon Butter
- 1 whole Onion, Chopped
- 1 whole Tomato, Chopped
- 1 Tablespoon Garlic Powder
- 3 ounces, weight Feta Cheese, Crumbled
- 1 whole Egg
- 2 Tablespoons Cornmeal
- 1 Tablespoon Paprika Powder
- 3 Tablespoons Dried Thyme
- 1/2 teaspoons Salt
- 1 teaspoon Black Pepper
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
- Cut your zucchini lengthwise in half and take the insides out (with a little spoon) and place zucchini halves on the baking sheet.
- Do not throw away the insides!
- Bring the butter in a large skillet over medium heat.
- Add onions, zucchini insides, tomato and garlic and cook for about 8 minutes, set aside.
- In a medium bowl combine feta cheese, egg, cornmeal, paprika, thyme, cooked vegetables and salt and pepper.
- Mix until well combined and taste to see if youd like more spices in it.
- Fill zucchini halves equally with veggie feta mix.
- Bake for 30 minutes, then turn on your broiler to high and broil for 5-10 minutes.
