Turkey Stroganoff
- 4 tablespoons unsalted butter
- 1 cup chopped onion
- 2 cups chopped mushrooms
- 12 teaspoon poultry seasoning
- 2 cups light sour cream
- 1 12 lbs cooked turkey (cut into small bite-sized pieces)
- 12 ounces whole wheat egg noodles
- At same time as cooking stroganoff, cook noodles pot with water per directions on bag.
- Heat a large pan on medium heat.
- Add 1 tablespoon of butter.
- Once melted, add onion and cook, stirring occasionally, until transparent.
- Melt remaining butter and cook mushrooms, stirring occasionally, until brown.
- Add poultry seasoning.
- Add gravy to mushrooms and continue to cook for about a minute.
- Reduce heath to low and add sour cream.
- Mix thoroughly.
- Stir in cooked turkey.
- Serve over noodles.
