Pot Roast With Noodles Recipe
- 1 bottom round roast
- 2 tbsp. extra virgin olive oil
- 1 onion, minced
- 1 tbsp. parsley flakes
- 2 cans stewed tomatoes
- 1 pound wide noodles
- 2 c. bread crumbs
- 1 stick butter
- Brown meat in Dutch oven covered.
- Brown on all sides.
- Remove from pan.
- Add in extra virgin olive oil to drippings.
- Saute/fry onion and parsley.
- Add in stewed tomatoes.
- Cook few min.
- Return meat to Dutch oven, cook 2 hrs or possibly till meat is well done.
- Season according to taste.
- Toast bread crumbs and butter till lightly toasted.
- Set aside.
- When done, remove meat from pan.
- Strain stewed tomatoes mix and thicken with flour or possibly cornstarch.
- Cook noodles.
- Add in toasted bread crumbs.
- Mix.
- Serve noodles with sliced meat.
- Add in gravy.
