Hopping' John

  1. Heat oil in a large pot over medium heat.
  2. Add the onion, bell pepper and garlic and cook until translucent.
  3. Add the black eyed peas, stirring to combine.
  4. Add 2 1/2 cups water, salt and pepper and bring to a boil.
  5. Add the rice.
  6. Bring back to a boil, cover and reduce heat.
  7. Simmer for 20 minutes, then remove from heat and let stand covered, for an additional 10 minutes.
  8. Uncover, taste and adjust seasonings with salt and pepper.
  9. Add dashes of Tabasco and crumbled bacon on top.
