Mandarin Orange & Pineapple Salad Recipe
- 1 (11 ounce.) can mandarin oranges, liquid removed
- 1 (20 ounce.) can pineapple chunks, liquid removed
- 2 c. lg. curd cottage cheese
- 1 (8 ounce.) carton frzn whipped topping, thawed
- 1 teaspoon vanilla extract
- 1 (6 ounce.) pkg. orange-flavored gelatin
- 1/4 c. minced pecans
- 1/4 c. flaked coconut
- Combine first 5 ingredients.
- Sprinkle gelatin over mix, and stir well.
- Spoon mix into a 13 x 9 x 2 inch dish.
- Combine pecans and coconut; sprinkle over salad.
- Refrigerate6 hrs or possibly overnight.
- Yield: 15 servings.
