Herb Stuffed Potatoes
- 2 large potatoes, baked and cooled
- 2 tablespoons butter, melted
- 14 cup nonfat milk
- 1 12 tablespoons parsley, chopped
- 18 teaspoon thyme
- salt
- pepper
- paprika
- Cut the cooked potatoes in half length-wise.
- Scoop out the meat and place in a mixing bowl.
- Add the butter, milk, herbs, and seasonings (Salt and pepper to taste).
- Mix until smooth and then spoon the mixture back into the shells.
- Sprinkle with paprika and bake at 350 degrees until lightly browned.
- (about 12-18 minutes).
