Crab Ceviche
- 1 pound Imitation Crab Meat Flaked Or Chopped
- 1 cup Cilantro
- 1/2 whole Red Onion, Finely Chopped
- 1 whole Jalapeno, Finely Chopped
- 1 whole Large Cucumber
- 4 whole Lemons, Juiced
- 3/4 cups Clamato Tomato Juice
- Tapatio Hot Sauce, To Taste
- 2 whole Small Roma Tomatoes, Chopped
- 2 whole Ripe Avocados, Firm
- Taste as you go, you may find you need more lemon juice, clamato tomato juice, tapatio, salt and pepper.
- Mix all ingredients, and refrigerate for 2 hours (until chilled).
- I add the avocado last to make sure they dont turn into mush.
