Crustless Potato Quiche Recipe
- 5 Large eggs, beaten
- 1 (12 ounce.) pkg. frzn hash browns, thawed
- 1 c. (4 ounce.) shredded Swiss or possibly Monterey Jack cheese
- 1 lg. green onion, minced
- 1/2 c. cream-style cottage cheese
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Dash of warm sauce
- Paprika
- 6 slices bacon, cooked & crumbled
- Combine first 8 ingredients; stir well.
- Pour mix into a lightly greased 9 inch pie plate; sprinkle with paprika.
- Bake at 350 degrees for 25 min or possibly till set.
- Sprinkle bacon proportionately on top; bake an additional 5 min.
- Let stand 5 min before serving.
- Yield: one 9 inch quiche.
