Southwest French Bread Pizza
- 1 can 14.5-oz. Black Beans
- 1 Tablespoon Chili Powder
- 1 can 4.5 Oz Diced Green Chilies
- 2 cloves Garlic
- 1- 1/2 cup Pico De Gallo
- 1 loaf French Bread
- 3/4 cups Shredded Monterey Jack Cheese
- 1 whole Avocado, Sliced
- 1.
- Drain black beans, but do not rinse.
- Pour black beans into a skillet on medium heat for 2 minutes.
- Add in your chili powder and stir.
- After 2 minutes, add in the can of diced green chilies.
- Continue to cook on medium heat for 2-3 more minutes while stirring.
- If it seems to dry, add in a tablespoon or two of water.

- Dice garlic and add it into the black bean and green chilies mixture.
- Keep on medium heat for another 2-3 minutes while stirring.

- Take the black bean mixture off the heat.
- Stir in your 1.5 cups of pico de gallo.
- You can use a store bought or make your own.
- I love Pioneer Womans recipe and I use it when making my own.

- Cut you French bread in half, then cut the halves into pieces about 6 inches long.
- Carve out a small area in the middle of each piece of bread.
- Then spoon the black bean mixture onto the bread.
- Cover bread completely with the mixture.
- 5.
- Top pizzas with the shredded cheese.
- 6.
- Put pizzas into broiler for about 2-3 minutes.
- Cook until the cheese is slightly brown, but try not to burn the bread.
- 7.
- Top with the sliced avocado and enjoy!
