Slow Cooker Chicken Chili Verde
- 4 lb chicken breast or thighs
- 2 cup water, chicken broth, or vegetable broth (you can use 1 cup water and 1cup broth)
- 3 cup salsa verde
- 1/2 large onion, diced
- 1 red bell pepper, diced
- 1 dried bay leaf
- 1 tsp ground coriander
- 1/2 cup fresh cilantro
- 1 salt and pepper to taste
- Add salsa and 2 cups of liquid to crock pot, place the chicken, onion, bell pepper, bay leaf, coriander and cilantro.
- Give a stir.
- Cook on high for 3-4 hours or on low for 6-8 hours until chicken is cooked.
- Remove chicken and shred.
- Add the chicken back to crock pot just before serving.
