Fruit Cake
- 1 c. dates
- 1 c. seedless raisins
- 2/3 c. butter
- 1 1/4 c. brown sugar, packed
- 1/4 c. dark molasses
- 1 1/2 c. hot water
- 2 eggs
- 1 jar Dromedary fruits and peels (1 lb. jar)
- 1 c. chopped nuts
- 3 c. sifted flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt
- Combine the dates, raisins, butter, brown sugar, molasses and hot water; simmer gently for 3 minutes.
- Cool in a mixing bowl. Beat the eggs in cooled mixture.
- Add the fruits and peels and chopped nuts.
- Sift together the flour, cinnamon, nutmeg, soda, baking powder and salt.
- Add this mixture gradually to the fruit mixture, beating well after each addition.
- Pour into 9-inch tube pan lined with waxed paper.
- Bake very slowly (275u0b0) for 3 hours.
