Chicken Taco Casserole

  1. Preheat oven to 350 F. Spray a 9 x 13-inch baking dish with cooking spray.
  2. Combine the chicken, salsa, corn and half of the cheese in a bowl.
  3. Stir to mix well.
  4. Cut 3 of the tortillas in half.
  5. Layer 4 of the whole tortillas and 2 halves in the bottom of the baking dish (this makes 5 tortillas per layer).
  6. Spread half the chicken mixture over the tortillas and top with 5 more tortillas (4 whole and 2 halves).
  7. Layer with remaining chicken mixture and the rest of the tortillas.
  8. Spread the other half of the cheese on top of the last layer of tortillas and cover dish with foil.
  9. Bake in the oven for 30 minutes until hot and bubbly.
  10. Makes 12 servings.
