Chicken Taco Casserole
- 3 cups Chicken, Cooked And Chopped
- 2 cups Your Favorite Mild Or Medium Salsa
- 2 cups Corn Kernels
- 2- 1/2 cups Shredded Cheddar Cheese
- 15 Corn Tortillas, 6 Inch Size
- Preheat oven to 350 F. Spray a 9 x 13-inch baking dish with cooking spray.
- Combine the chicken, salsa, corn and half of the cheese in a bowl.
- Stir to mix well.
- Cut 3 of the tortillas in half.
- Layer 4 of the whole tortillas and 2 halves in the bottom of the baking dish (this makes 5 tortillas per layer).
- Spread half the chicken mixture over the tortillas and top with 5 more tortillas (4 whole and 2 halves).
- Layer with remaining chicken mixture and the rest of the tortillas.
- Spread the other half of the cheese on top of the last layer of tortillas and cover dish with foil.
- Bake in the oven for 30 minutes until hot and bubbly.
- Makes 12 servings.
