Oven-baked Chicken or Pork Chops with Chipotle-Maple Barbecue Sauce

  1. Pat the meat dry with a paper towel.
  2. Sprinkle top and bottom with salt and pepper.
  3. Place the meat in a baking dish.
  4. To make the barbecue sauce: Combine all the sauce ingredients and place them in a small saucepan.
  5. Bring to a simmer, reduce the heat to low and simmer, uncovered for 20 minutes.
  6. This barbecue sauce should ideally be made the day before and left in the fridge to allow the flavors to fully combine.
  7. This makes a big difference in flavor.
  8. Baste the meat with half of the barbecue sauce.
  9. Cover the baking dish with aluminum foil and bake at 350 degrees F for 1 hour.
  10. Remove the foil, baste the meat with the remaining sauce, increase the heat to 400 degrees F and bake, uncovered for another 10 minutes.
