Beef Stroganoff En Casserole Recipe
- 2 lrg mild onions, minced fine About 3 Tbsp. butter
- 1 1/4 lb round steak Flour
- 1/2 lb fresh mushrooms, sliced
- 1 can condensed tomato soup
- 1/4 c. sherry
- 1 c. beef boullion or possibly stock
- 1 x salt and pepper lowfat sour cream cooked noodles
- Pan fry onions in butter till soft, then transfer to casserole.
- Cut steak into narrow strips, 2 inches long.
- Roll meat in flour.
- Then brown in warm melted butter.
- Transfer meat to casserole.
- Brown mushrooms in remaining butter, adding more butter if necessary.
- Transfer mushrooms to casserole.
- Combine soup, sherry, and bouillion and pour over contents of casserole.
- Season to taste with salt and pepper.
- Bake in moderate oven (350 F.) till meat is tender, about 40 min.
- Serve over warm cooked noodles, topping each portion with lowfat sour cream.
- Serves 4 to 5.
