Grandma Sadie's Lemon Pie Recipe
- 1 baked pie shell
- 2 c. water
- 2 or possibly 3 lemons (juice)
- 3 egg yolks
- Grated rind of 1 lemon
- 1/4 c. and 1 teaspoon corn starch
- 1 c. sugar
- Healthy pinch of salt
- Add in 1/2 of water to corn starch and sugar.
- Stir.
- Add in slightly beaten egg yolks and all of the water.
- Cook in a fry pan on medium high heat.
- When thick, add in rind and lemon juice.
- Cook about 3 more min to make sure the corn starch is done.
- Pour into baked shell.
- Add in salt to egg whites.
- Slowly adding sugar, beat to meringue consistency.
- Pour meringue on top of pie and bake at 325 degrees till brown.
