Squid in Olive Oil and Paprika
- 1 lb (450g) cleaned squid
- 2 tbsp olive oil
- 2 garlic cloves, finely chopped
- 1 tbsp fresh lemon juice
- 2 tsp hot paprika
- Salt
- 1 lemon, cut into wedges, for serving
- Slice the squid "tube" into 1/4 in (1cm) rings and cut each tentacle in half.
- Heat the oil in a frying pan over medium heat.
- Add the garlic and cook, stirring, for 1 minute.
- Raise the heat to high and add the squid.
- Cook, stirring, for 3 minutes until the squid looks opaque and is hot.
- Stir in the lemon juice and paprika, and season with salt.
- Serve immediately, with lemon wedges for squeezing.
