Quinoa stir

  1. Start with cooking quinoa, combine 1 cup of quinoa with 2 cups of chicken broth.
  2. Once starting to boil, turn down to a simmer and cover.
  3. Cook for twenty minutes.
  4. In a large skillet, medium heat with unsalted butter cook down the onion and garlic.
  5. Quarter cherry tomatoes and toss in.
  6. Squeeze lemon juice.
  7. Cook down til starting to wilt.
  8. Next, add diced mushrooms with the cooked quinoa with spinach.
  9. Cook together.. have the ingredients marinade on low.
  10. Great to pair with grilled chicken or a nice juicy steak.. enjoy guys!
