Hina Doll Sushi for Hinamatsuri Girls' Day

  1. Hard boil the quail eggs and peel the shells.
  2. Prepare the sushi rice.
  3. Put the cooked rice in a bowl, pour over the sushi vinegar and mix in gently.
  4. Mix in the sesame seeds.
  5. Make 2 triangular rice balls.
  6. Crack eggs into a bowl and beat with chopsticks.
  7. Add the sugar, salt and katakuriko with water (mixed with the same quantity) and mix well.
  8. Grease a frying pan with a little oil and pour 1/2 of the egg mixture.
  9. Spread the egg mixture by moving the frying pan.
  10. When the edge of the omelet starts to dry, flip over.
  11. Cook quickly and remove from the frying pan.
  12. Pour in the remaining egg mixture, add blanched and chopped spinach, and cook.
  13. Cut the cucumber in half lengthwise and peel a thin slice with a peeler.
  14. Make a crown and scepter (the white ball is the quail egg, which will be the doll head).
  15. Cut the carrot in half lengthwise and peel a thin slice with a peeler.
  16. Make a fan and blanch (not for too long, otherwise it won't hold shape).
  17. Make an emperor hina doll with a thin omelet with spinach.
  18. Fold 1/3 of the omelet and put the rice ball in the centre.
  19. Wrap with a cucumber slice.
  20. Wrap the rice balls with the omelets.
  21. Secure with a toothpick.
  22. Use a toothpick and fix a quail egg on top of the rice ball.
  23. Make a doll's hair with nori seaweed and crown with a cucumber piece (stick to the head with a toothpick).
  24. Make eyes with the black sesame seeds.
  25. Put a scepter to the groom and it's done.
  26. Make the empress hina doll.
  27. Arrange the two dolls and they're done.
