Quick Bread 7 Ways

  1. Pecan Date: Combine chopped pecans, 1 cup chopped dates and 2 teaspoons flour in bowl; toss to coat.
  2. Gently stir into batter.
  3. Cherry-Cranberry Almond: Omit pecans.
  4. Substitute almond extract for vanilla.
  5. Combine 1 cup cherry-flavored dried cranberries, 1 cup sliced almonds and 2 teaspoons flour in bowl; toss to coat.
  6. Gently stir into batter.
  7. Apricot Walnut: Omit pecans.
  8. Combine 1 cup chopped walnuts, 3/4 cup finely chopped dried apricots and 2 teaspoons flour in bowl; toss to coat.
  9. Gently stir into batter.
  10. Mini Chocolate Chip: Omit pecans.
  11. Combine 3/4 cup mini chocolate chips and 1 teaspoon flour in bowl; toss to coat.
  12. Gently stir into batter.
  13. Lemon Poppy Seed: Omit pecans.
  14. Substitute lemon juice for vanilla.
  15. Gently stir 1 tablespoon poppy seeds and 2 teaspoons lemon zest into batter.
  16. Bake 28-30 minutes.
  17. Orange Coconut Macadamia: Omit pecans.
  18. Substitute orange juice for vanilla.
  19. Combine 3/4 cup macadamia nuts and 1 teaspoon flour in bowl; toss to coat.
  20. Gently stir macadamia nuts, 1 cup sweetened flaked coconut and 2 teaspoons orange zest into batter.
  21. Ginger Spice: Omit pecans.
  22. Add 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon cardamom and 1/4 teaspoon ground nutmeg to flour mixture.
  23. Stir 1/4 cup chopped crystallized ginger into batter.
  24. Bake 28-30 minutes.
