Mole Chicken
- 3 tbsp vegetable oil
- 4 lb chicken
- 1 each chopped onion
- 1 each green bell pepper
- 3 clove garlic
- 2 tbsp chili powder
- 2 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1 can 14oz can dice tomatoes
- 1 cup chicken broth
- 1 cup dark Mexican beer
- 1/4 cup raisins
- 2 each chopped chipotle peppers in adobo sauce
- 2 tbsp creamy peanut butter
- 1 tbsp sugar
- 1 tsp salt
- 2 each squares of unsweetened chocolate chopped
- Heat oil in large skillet over medium heat add chicken in batches cook 5 to 7 minutes or until browned on all sides place in large baking pan set aside
- Add onion bell pepper and garlic to skillet; cook and stir 5 minutes or until vegetables are softened.
- Stir in chili powder, cumin and cinnamon; cook 5 minutes.
- Add tomatoes, broth, beer, raisins, chipotle peppers, peanut butter, sugar and salt; bring to a simmer cook and stir 20 minutes.
- pour vegetable mixture and chocolate into food processor or blender; process until smooth.
- Preheat oven to 350.
- Pour sauce over brown chicken pieces.
- Cover pan loosely with foil bake 45 minutes or until chicken is cooked through 165.
