Sausage Lentil Soup Recipe
- 1 pound lentils
- 10 c. water
- 1 lg. minced onion
- 1 pound smoked sausage
- 1 bay leaf
- 1 dash marjoram
- 2 dashes pepper
- 2 grated carrots
- 2 stalks minced celery
- 3 lg. potatoes, minced
- 1/4 c. dry parsley
- Salt to taste
- Wash and rinse 1 lb.
- lentils.
- Add in water to lentils in large pot.
- Add in onion, sausage, marjoram, bay leaf and pepper.
- Cover and bring to a boil.
- Simmer 2 hrs, stirring occasionally.
- Remove from heat.
- Cut sausage into 1/4 inch slices.
- Add in carrots, celery, potatoes, and parsley.
- Cover and simmer 1 more hour, stirring frequently.
- Season to taste.
