Easy and Delicious Vegetarian Soup (Pasta E Fagioli)

  1. Saute onion in oil in large pot until soft.
  2. Add garlic and saute few more minutes.
  3. Add beans with their liquid.
  4. Add jarred pasta sauce and simmer while cooking pasta.
  5. When pasta is done, add Boca Crumbles to sauce & bean mixture then add drained pasta and cheese, reserving pasta cooking liquid.
  6. Let sit for a half an hour and add reserved pasta cooking liquid to thin to desired consitstency.
  7. Will get better and thicker as it sits.
  8. Serve with more cheese for garnish.
