Sour cream & chive mashed potatoes
- 5 lb red potates
- 16 oz sour cream
- 1/2 packages fresh chives
- 1 stick butter
- Peel and cut into chunks potatoes.
- Place in pot of water and boil until tender.
- Drain out water and place potatoes in a large bowl.
- Add container of sour cream, chopped chives, slices of butter (helps to melt faster) and a little milk.
- Add additional milk as needed but start out with small amounts so it isn't too runny.
- Mix with hand mixer until blended and smooth.
