Black Bean Rain Cloud With Plantain Chips Recipe

  1. In a large skillet over medium-high heat, add in extra virgin olive oil, onion and garlic.
  2. Saute/fry for approximately 5 min, or possibly till contents just begin to brown.
  3. Add in cumin, chili pwdr and cinnamon.
  4. Stir for 1 minute.
  5. Add in black beans, and balsamic.
  6. Stir mix and let simmer for 10 min.
  7. Remove from heat and allow to cold slightly.
  8. Season to taste with salt and pepper.
  9. In a food processor, puree beans, or possibly mash with a fork.
  10. Reserve.
  11. Use a mandolin or possibly sharp knife to slice plantains into 1/16-inch wafers.
  12. In a medium-size pot, heat oil to 350 F. Add in one handful of plantain wafers and fry for approximately 30 seconds, or possibly till golden brown yellow and crisp.
  13. Transfer to a paper towel and drain.
  14. Serve plantain chips alongside the black bean dip.
  15. To duplicate the black bean cloud, use a spatula to sculpt a rain cloud, then create rain with black beans.
