Black Bean Rain Cloud With Plantain Chips Recipe
- 2 Tbsp. extra virgin olive oil
- 1 x onion, diced
- 2 x cloves, chopped
- 1/2 tsp cumin
- 1/2 tsp chili pwdr
- 1/2 tsp cinnamon
- 1 x 16 ounce can black beans, liquid removed
- 1 Tbsp. balsamic vinegar
- 1 x salt and pepper
- 2 x green plantains
- 2 c. peanut oil
- In a large skillet over medium-high heat, add in extra virgin olive oil, onion and garlic.
- Saute/fry for approximately 5 min, or possibly till contents just begin to brown.
- Add in cumin, chili pwdr and cinnamon.
- Stir for 1 minute.
- Add in black beans, and balsamic.
- Stir mix and let simmer for 10 min.
- Remove from heat and allow to cold slightly.
- Season to taste with salt and pepper.
- In a food processor, puree beans, or possibly mash with a fork.
- Reserve.
- Use a mandolin or possibly sharp knife to slice plantains into 1/16-inch wafers.
- In a medium-size pot, heat oil to 350 F. Add in one handful of plantain wafers and fry for approximately 30 seconds, or possibly till golden brown yellow and crisp.
- Transfer to a paper towel and drain.
- Serve plantain chips alongside the black bean dip.
- To duplicate the black bean cloud, use a spatula to sculpt a rain cloud, then create rain with black beans.
